STARR RANCH APPLE CHEDDAR PIE
FILLING
8 Starr Ranch Growers apples (Golden Delicious, Fuji or a mixture)
1 cup sugar
1/4 cup flour
1/2 teaspoon ground cinnamon
1/8 teaspoon freshly
1/2 cup grated cheddar cheese
grated nutmeg
1 teaspoon lemon juice
CRUST
1 stick (1/2 cup) butter
8 ounces cream cheese
2 1/2 cups flour
1/2 teaspoon salt
1/2 cup cold water
Preheat oven to 350°F.
To prepare the filling, peel, core and thinly slice apples. Mix all ingredients together and set aside. To prepare the crust, place butter, cream cheese, flour and salt in a food processor; pulse until pea size. Add water a little at a time, just until blended. Form dough into 2 balls, making one a little bigger. Roll out the larger ball of dough, place in a 9-inch pie pan, trim and crimp edges. Fill the piecrust with filling. Use remaining dough for another recipe or use for top crust of pie, then garnish top with a sprinkle of cheddar cheese.
Bake for 1 hour, or until golden.
Makes 8 servings.
