PENETROMETER
The firmness is checked by a pressure tester (a penetrometer) and measured for sugar levels. At harvest, the sugar content needs to be above 12 percent and the firmness should be between 8 and 12 pounds pressure. 8 to 10 pounds pressure is ideal for shipping in the proximity, 10 to 12 pounds works well for longer distances.
