For more than four generations, the Gilberts have grown stone fruit, refining and perfecting their methods. Today they are the second-largest stone fruit grower in the state of Washington, producing a half million boxes of fruit every year. Sweet and ready for that out-of-hand, out-of-this-world taste experience, apricots are the first of the stone fruit to reach the summertime market, running from June through August. Luscious, juicy peaches and yellow-flesh nectarines are available from July through September, and the white-flesh variety, rosy on the outside and creamy-sweet on the inside, along with sweet pluots, are available in August and September. The small, dense, purple and delicious Italian prunes, excellent for baking, are available in August.
